This trifle will always impress! It’s festive colours and sweet, fruity jelly will put a smile on the face of anyone who tastes it, guaranteed! While it looks complicated, it’s simple to make with impressive results! It will recipe will serve 6-8 people.

The original recipe I used can be found here, but I’ve made it simpler to follow so you can practice English while making delicious Christmas treats!

You’ll need:

  • 750 g boysenberries and raspberries, plus extra berries to serve
  • 150 g caster sugar
  • the seeds of 1 vanilla bean
  • 5 gelatine leaves, softened in cold water for 5 minutes
  • ½ cup pink moscato
  • the juice and rind of one lemon
  • 80 ml limoncello
  • 600 g crème fraîche
  • 75 ml milk
  • 20 gm pure icing sugar, sifted
  • a simple sponge cake, about an inch thick.
  • a glass trifle bowl to serve your trifle in!

To make the trifle:

  1. Put the berries, sugar, water and half of the vanilla bean seeds in a large saucepan and simmer over a low heat for 50 minutes.
  2. Strain through a sieve to separate the fruit from the liquid. Put the fruit to the side (you’ll need it in a minute!)
  3. Add the gelatine to the liquid and stir to dissolve. Add moscato, lemon juice and 40ml limoncello. Put half of the liquid into trifle bowl, add half of the fruit (or some fresh berried if you prefer) and put it into the fridge for about 2 hours (until the jelly is set).
  4. Keep the remaining jelly cool, but don’t let it set yet!
  5. Meanwhile, combine the crème fraîche, milk, lemon rind, icing sugar and the rest of the vanilla seeds in a bowl.
  6. When the jelly in the trifle bowl has set, spread half of the mixture over the jelly.
  7. Cut the sponge to neatly fit the shape of the bowl and lay it on top. Drizzle the sponge with 40ml limoncello.
  8. Add the next layer of jelly. (It should be half set, so you should be able to pour it ontop of the sponge). Scatter with the cooked berries.
  9. Cover the bowl with plastic wrap and return it to the fridge for another 2 hours, until the jelly is set.
  10. Finish with the remaining crème fraîche mixture. Cover and refrigerate overnight.
  11. When you are ready to serve your trifle, pile fresh berries on top! Enjoy!

Now you can serve this delicious dessert and tell your friends you followed the recipe in English!!!! Awesome!
